2007 Domaine Servin Chablis "Les
Pargues" $26.10
There is nothing quite like excellent Chablis - the flavors at the core
and the texture of wine can be some of the best tasting experiences
possible with white wine. And, as we like to say, Chablis is
"Chardonnay as God intended it to be." Meanwhile, the
combination of exceptional and affordable Chablis is very hard to find,
so when we do come across one, we jump at the chance to get it into
the club. The wonderful selection from Domaine Servin is sure to
please a wide variety of tastes. Profoundly rich without being
overbearing or weighty in the glass, this dazzles from first sip with
flint-toned lemon notes, caressing the palate with focused flavors and
an incredibly long and zesty finish. It's hard not to just drink this
by itself, but the strength and acidity of the wine calls for food.
Try white-fleshed seafood and shellfish (oysters are just superb with
Chablis), herbed chicken, or pasta dishes with white sauces. Serve
chilled but not too cold, or the complexity of the wine will be
somewhat muted.
2008 Valcantara Garnacha Old Vines $10.70
This is a just a superb fall wine, with a smooth, fruity and spicy
character to take the chill out of the evenings. The Valcantara is
made of Grenache from vineyards of more than 40 years old. It
opens with flavors of berries, following to lively cherry and
leather notes which carry from the nose to the palate. The wine is
medium bodied, lush, full, spicy and fruity, with well-placed
tannins. It's ideal with any roast or strongly flavored meat
dish, as well as a variety of tapas. It's also just a great wine
to open the evening with!
